Vegetarian Chili

Ingredients
- 1 Tablespoon Olive oil
- 1 Piece Onion
- 1 Piece Bell pepper
- 2 Piece Garlic
- 1 Piece Zucchini
- 1 Piece Kidney beans
- 1 Piece Black beans
- 1 Piece Diced tomatoes
- 1 Tablespoon Chili powder
- 1 Teaspoon Cumin
Instructions
- Heat olive oil in a large pot and sauté the onion, bell pepper, and garlic until softened.
- Add the zucchini, kidney beans, black beans, and diced tomatoes to the pot.
- Stir in chili powder, cumin, salt, and pepper.
- Simmer the chili for 20-30 minutes, stirring occasionally.
- Garnish with fresh cilantro before serving.
