Vegetarian Chili

A hearty and spicy chili with beans, vegetables, and a rich tomato base.

Ingredients


  • 1 Tablespoon Olive oil
  • 1 Piece Onion
  • 1 Piece Bell pepper
  • 2 Piece Garlic
  • 1 Piece Zucchini
  • 1 Piece Kidney beans
  • 1 Piece Black beans
  • 1 Piece Diced tomatoes
  • 1 Tablespoon Chili powder
  • 1 Teaspoon Cumin

Instructions


  1. Heat olive oil in a large pot and sauté the onion, bell pepper, and garlic until softened.
  2. Add the zucchini, kidney beans, black beans, and diced tomatoes to the pot.
  3. Stir in chili powder, cumin, salt, and pepper.
  4. Simmer the chili for 20-30 minutes, stirring occasionally.
  5. Garnish with fresh cilantro before serving.
